Summer for me always meant hot weather, sweat and more sweat. But I do look forward to summer for its vast amounts of fruit and berries. This year for Christmas, I’m in charge of making dessert for the family. With all the beautiful berries I bought for Christmas, I turned them into a cheesecake-like tart using minimum effort to obtain maximum flavour and wow factor.
No-Bake Berry Tart
Served 8. Makes a 25cm tart.
Ingredients
400g digestive biscuit
80g unsalted butter, soften
500g cream cheese
350g lemon curd
Mixture of berries
Method
- In a food processor, process the digestive biscuits and butter together until it resembles wet sand. Press into the tart tin and place in the fridge for 10 minutes.
- In a bowl, mix the cream cheese with lemon curd until well combined. Alternatively use a food processor. Pour onto the prepared tart base.
- Randomly arrange the berries on top of the lemon cream cheese filling. Refrigerate for a couple of hours or overnight to set.
